Pumpkin Apple Streusel Muffins

Fall is notorious for prompting some of the most delicious, hearty, comfort food recipes around. Our Pumpkin Apple Streusel Muffins is the perfect fall muffin recipe!

Ingredients

Muffins

  • 2 ½ c. Flour
  • 2 c. Sugar
  • 1 T. Pumpkin Pie Spice
  • 1 t. Baking Soda
  • ½ t. Salt
  • 2 Eggs lightly beaten
  • 1 c. Pumpkin
  • ½ c. Vegetable Oil
  • 2 Apples Peeled & Finely Chopped

Streusel Topping

  • 2 T. Flour
  • ½ t. Cinnamon
  • ¼ c. Sugar
  • 1 T. Butter

Instructions

Streusel Topping: Mix together until crumbly.

Muffins

  1. To make muffins, combine dry ingredients in a bowl. 

    In a second bowl, mix remaining ingredients. 

    Mix wet and dry ingredients until moist.  

    Spoon batter into prepared muffin tins. 

     Top with streusel topping. 

     Bake at 375° for 18-20 minutes. Makes 18-24 muffins.
